You're on the right track. When you install a linux distro, / is your root
filesystem which is mounted to some partition on some device. Then, 'home'
is a directory located inside of that where the home files for the users are
stored. Some distributions allow you (and even encourage you) to make a
separate partition on your drive and then have the distribution mount that
to /home so that if you delete your main partition (that was mounted to /)
you will still have all of the things that you stored in your home folder
and on your desktop.
So, to answer your final question (couldn't [/home] as easily be just a
directory?) .......yes
